Great Wheat Bread

My friends mom bakes delicious homemade wheat bread, she gave me the recipe, turns out it is Sister Hinckleys recipe

2 pkgs of yeast in 1/2 cup warm water and 1/2 tablespoon of honey

in a mixer add the following

3 1/2 cups warm water
1 1/2 cup dry milk
1 cup oil
4 beaten eggs
1/4 cup honey
2 tablespoons salt
2 cups white flour
8 1/2 cups wheat flour

knead in the mixer (my mixer can only do half of the flour- I do the rest by hand) let rise til double. divide into 6 small or 3-4 large loafs of bread, let rise til double (in greased pans) Preheat oven to 400 degrees, when ready to bake turn heat down to 300 degrees and bake for 1 hour.

No-Bake Cookies

1 cube margarine
2 c. sugar
1/2 c. milk
1/4 c. dark cocoa
1 tsp. vanilla
3 c. oatmeal
1/2 c. peanut butter

In pan blend first 4 ingrediants, boil it for 2 mins. Stirring constantly, remove from heat. Add remaining ingrediants. Drop by tsp. or Tbs. (depending on the size you want) onto wax paper. Let cool. Enjoy

Thin Mint Cookies

Buy andies mint chocolate (in a bag)
melt in microwave, til melted to dip
take ritz crackers and dip in chocolate

then let them harden.

Enjoy!

Dad's Birchmuleis

If you have any questions about this, call dad. Think big yellow bowl. Thats what we used to make it in.

Get quaker rolled oats. Soak them over night soak them in milk, water, anything.
Then put anything into it you want apple, fruit cocktail. you can use canned or fresh fruit.
Always had a banana in it. You can put nuts in it, if you want.
Mix with yougurt as much as you want. Flavored yougurt adds more flavor.

If you need to you can sweeten it, with sugar. Or you can use the syrup from the fruit to sweeten it.

Fruit Bars

1 3/4 c. sugar
1 c. soft margarine, or butter flavored crisco
1 tsp. vanilla
1 tsp. salt
4 eggs
3 c. flour
1 1/2 tsp. baking powder
Can of pie filling fruit of your choice (as kids we did cherry or apple)

Cream first four ingrediants. Beat well after each egg. Gently spoon 3 c. flour into the mixture.
Spread 2/3 of the mixture into a pan (the dough maybe will be stiff).
Spread fruit filling on top. Drop rest of batter by spoonfuls on top of the fruit.

Bake 350 for 35-40 mins.

Glaze
1 c. powdered sugar
1-2 Tbs. milk
1/2 tsp. almond extract

Combine well.

Drizzle this over the cool bars.

Grandma Strong's Cake with Frosting

2 c. flour
2 c. sugar
1 c. water
6 Tbs. cocoa
1/2 c. margerine
2 eggs
1 tsp. soda
1 tsp salt
1 tsp. vanilla
1/2 c. sour milk

Sift together sugar and flour. Boil the water, cocoa and margarine, then mix to the dry ingrediants.
Add the eggs, soda, salt, vanilla, sour milk.
Bake 400 for 15 mins.

Frosting
1 stick margarine
4 Tbs. cocoa
6 Tbs. milk
3 3/4 c. powdered sugar
1 c. walnuts or pecans (don't forget to shell them yourselves, Grandpa did this part)

Boil margarine, cocoa, milk.
Add powdered sugar and nuts.
Frost cake and enjoy

Mom's Strawberry Cake

1 pkg. white cake mix
1/2 cup water
1 pkg. strawberry jello
2 heaping Tbs. flour
3/4 c. oil
2 c. fresh strawberries or 10 oz. frozen
4 eggs

Mix dry ingrediants together. Add water, eggs, oil and berries (keeping 4 Tbs. berries for frosting). 3 Minutes at moderate speed.
Bake 35 mins. at 350.

DO NOT OVER BAKE!!!!
refrigerate after baking

Strawberry Frosting
1/2 c. margerine
1 lb. powdered sugar (this is 1 pkg.)
4 tbs. strawberries
1/2 tsp. vanilla
dash of salt

Beat til smooth. Frost cake, refrigerate. Garnish with fresh strawberries

Cream Wafers and Frosting

You can make these as festive as you would like.

For Christmas I sprinkled with broken candy canes, and flavored frosting with peppermint.
The first time I had them, the frosting was made with Almond extract and was very good.

Cream Wafers
1 c. butter
2 c. flour
1/3 c. evaporated milk

In large bowl mix butter, beat in flour and milk. Form into a ball, chill 2 hours or until firm.
Preheat oven 375.
roll til 1/8 inch thick. Cut into 1 1/2 round cookies. Bake 7-9 minutes on ungreased cookie sheets before baking prick them with a fork at least 3 times. Sprinkle with sugar.

Wafer Frosting

1/2 c. softened butter
1 tsp. vanilla
2 1/3 c powdered sugar
1/4- 1/2 tsp flavoring extract

Beat all together til smooth. Generously spread half of the wafers with frosting, top with the other wafers

Grandma Margaret's Shortbread Cookies

4 c. flour
1 lb. butter or 1/2 butter and 1/2 margerine
1 cup sugar
1 tsp. almond flavoring

cream butter, add sugar, cream well together (with hands- this is how grandma did it), till light and fluffy. Add flavoring and flour.

Roll into a roll in wax paper(like you are making a long snake out of the dough.)
flatten top, and sides and bottom.
Cut into slices with dental floss, or thread, and bake at 300 for 30-40 minutes

Do not let them brown.

If you chill dough is easier to cut. use dental floss to cut, so you not smashing the cookie shape.

Deluxe Cheeseburger Melt

This is off the Bisquik box, but it is fast and easy to make and is really good as well.

1 1/3 c Bisquik
1/4 c water
2 eggs
1 1/2 c shredded cheese, plus 1/2 c. for sprinkiling
1 lb ground beef
1 can cream of mushroom soup
1 c. frozen veggies

Heat oven to 400. Pam a large cake pan. Mix first 4 ingrediants. Brown beef, drain grease. Stir in soup and veggies. Heat until hot.

Spread bisquik in pan, spread meat and soup mixture over bisquik
Bake 25-35 minutes or until edges are golden brown
Sprinkle with some the 1/2 c. cheese, bake till cheese melts

Grandma Strong's Tasty Chicken Bake

I have made this in the crockpot, it is easy to make and very good.

8 whole chicken breasts or boneless skinless chicken breasts
16 slices bacon
2 pkgs of ham (6 ozs in total)
1 pint sour cream
2 cans cream of mushroom soup
1 can drained thinly sliced water chestnuts
1/2 lb fresh mushrooms sliced and sauteed in butter

wrap each chicken in peice of bacon and ham, secure with toothpick. Arrange in baking pan.
Combine soup, sour cream, waterchestnuts, pour over chicken.

Bake 250 for 3 hours. Top with mushrooms and serve

This maybe prepared a dat ahead.

If using crockpot, don't use toothpicks. On low all day, on high half a day.

serve with rice.

Wanda Eckhart's Funeral Potatoes

2 lbs frozen hash browns, broken apart, almost thawed
2 cans cream of chicken soup
1 cube butter
1 pint sour cream
3/4 cup grated cheese
2 Tbs. chopped onion
1 c. corn flakes tossed w/ 3 Tbs. melted butter

In saucepan combine soup, sour cream, cheese and onion. Heat and stir til it is a smooth sauce. Place half potatoes in large baking dish, cover with sauce, coninue til finished with potatoes. Cover with cornflakes.

Bake at 350 for 45 minutes.

Mom's Spaghetti Sauce

2 onions
1 or 2 green peppers
1 T. salad oil
2 lbs. hamberger
1 large can tomatoe sauce
1 small can tomatoe paste
1 can water for tomatoe paste can
1 pkg. schhiling spagetti sauce seasoning
1 tsp garlic
1/2 tsp oregano

cook first three ingrediants til tender-not borwn- brown hamberger
add remaining ingrediants stir well, cover and simmer until you are ready to eat

Sweet and Sour Pork Chops

3 T. orange marmalade
2 T. soy sauce
1 tsp. dijon mustard
1/4 c. water
4 porkchops

In small bowl, mix first 4 ingrediants, mix well.
Season porkchops and pan fry-2 mins each side- til lite brown
spoon mixture over porkchops and bring to a boil
reduce heat to low
cover and simmer until tender
serve with pan juice on the side

Watch carefully to aviod burning the jam

Burger Bundles Rita Dell'Ergos

2 lbs. ground beef
1 pkg. stovetop stuffing
onion soup mix

Mix soup mix and ground beef together. (sometimes I use saltine crackers as well)
Make the stovetop stuffing according to package directions
Make hamberger patties with the meat, add a spoonful or two of stuffing, seal with another hamberger pattie.

Cook at 350, for 30 minutes.

Serve over rice, with brown gravy

Creamy LemonLime Chicken

Spray crockpot with pam.

Add 2 cans of cream of chicken soup
add about 2lbs of boneless skinless chicken
1/4 cup lemon juice
1/8 cup lime juice
3 cup carrots ( I used dehydrated carrots- so I added a more 1/4 cup water, and 1/8 more lemon juice, with a couple more squirts of lime) if useing fresh carrots about 6 cups
1 1/2 tsp. garlic powder
2 tsp. dijon mustard
1/2 cup water

cook on low for 8 hours, on high for 5.

Serve over rice and noodles, sprinkle with parmesan cheese, and salt and pepper to taste

London Broil

Buy a London Broil
Buy one package of Meat Marinade (McCormick Seasoning Mix)

Follow directions on the back of the marinade (except you can marinade the steak for hours in the fridge.)

Broil your meat, flipping it from one side to the next. I keep my pan on the second rack from the top when I broil so that it takes longer to cook and it doesn't burn to quickly. The meat may be a little blackened by the time the inside is cooked to medium rare.

Ham

- Ham
- 1 can of pineapple slices
- brown sugar
- cloves

Mix the juice from the pineapple with 1/2 cup of brown sugar. Poke the cloves all over the ham and place pineapple rings around the cloves. Pour the pineapple juice/brown sugar mix over the ham.
Bake until warm.

Enjoy!

Moms pork chops and rice

There are a couple of ways to do this. First of all, season your pork chops with salt & pepper, Season All, and garlic salt. Brown the chops in a little oil.

Put minute rice in a 9x13 pan, about 2 cups worth. Mix 1 can of cream of mushroom soup and 1 can of milk and salt and pepper. Place pork chops onto rice and then place mushroom soup mix over the top of everything. If it look a little dry add water.

Bake for about 35 minutes or until pork chops are done.

The other way I have made this is just the pork chops and mushroom soup mix over the top and then serve already cooked rice and pour the sauce over the rice when ready to eat.

Augraton Potatoes

-Boil potatoes in salt water then cool and peel dice (1/2 a 5 lb bag)
-Put one can of cream of mushroom soup in sauce pan and dilute with 1 can of milk.
-Season with garlic salt, onion salt, salt and pepper and a little dry parsley(optional)
-Shred lots of cheese
-Alternate potatoes and cheese
-Pour sauce over the top and add more cheese
-Bake 300• for 1 hour

Fruit Pizza

Yellow Cake Mix - make the batter
Vanilla Pudding with 1 cup of cool whip
Fruit- any of your choice but I like strawberries, kiwi, blueberries and bananas. The more colorful it is the prettier it is.

Bake Yellow cake in a pizza pan. Depending on the size of pan don't use all of the cake mix. You want a thin layer of cake. Bake the cake and let cool.

After cake is cooled take the pudding/cool whip mix and frost the top.

Decorate the top with any fruit. If you want use cool whip to decorate.

Chicken Salad by Lois Schaalje

4 cups grapes (I prefer red, but green works too)
1 cup toasted slivered almonds
2 cups chicken (cooked and cubed)
1 cup chopped celery
Sauce:
3/4 cup mayo
2 TB lemon juice
2 TB sugar
1 tsp course ground pepper

Combine all and chill before serving. The longer it's chilled the better it is.

Serve on a croissant or as a salad.

Mexican Soup

This is a family favorite that is also a standby. It's EASY and I almost always have all the ingredients on hand. I ate this at a friends house years ago and it's a great meal to take to others or a fun with just as a lunch with friends. Hope you like it too.

1 can black beans, drained and rinsed
1 cup salsa
1 cup frozen corn
1 cup cooked, chopped chicken
1 can chicken broth

Place all ingredients in a pot. Bring to boil, then simmer 5-10 minutes. Serve with a dollop of sour cream and Doritos or corn chips of any kind.

Mom's Zuchini Bread

Mix:
3 eggs
1 Cup oil
2 Cups sugar
2 Cups grated zuchini
3 tsp vanilla

Add:
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/4 tsp baking powder

Bake at 325• for 1 hour

Lion House Banana Bread

I've called Katie to get this recipe many times, I know because I have many copies of it no written in my cook book!

1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed bananas (I always use about 3 ripe bananas)
1/4 cup milk
1 tsp lemon juice
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup chopped nuts (optional--this is a constant debate at our house)

Cream butter and sugar. Add eggs and beat. Add Bananas, milk and lemon juice. Add dry ingredients.

Bake 1 hr @ 350○ makes 1 loaf

Peggy Wilson's Cheese Ball

This is by far the best homemade cheese ball I've ever had.

2 TBS Chopped green onions
1/4 cup chopped bell pepper
2 8oz cream cheese softened
1 8oz can crushed pineapple- drained
2 cups pecans- chopped fine
1/2 tsp salt
fresh parsley & red cherries to garnish for a festive look.

Reserve 1 cup chopped pecans.

Mix remaining ingredients thoroughly with hands. Shape into ball and cover and chill in fridge for at least an hour. Spread remaining pecans on wax paper and roll the cheese ball until covered. Chill and serve with veggies or crackers.
Yummy!

Mom's Christmas Wassell, sorry it's late!

Bring 4 cups water and 2 Cups sugar to boil - turn heat to low

Add:
4 Sticks Cinnamon
20 Cloves
12 All spice berries
1 pinch of Ginger
Let it seep for an hour.

Add:
1 Jug of apple juice
1 small lemonade diluted
2 small oj diluted

Heat and serve. ENJOY!

This makes a TON! So I normally half the recipe.

Creamy Potatoe and Creamy Cheese Soup Mixes

For Christmas this past year, I made dry soup mixes to give to friends. They were a big hit all around so I thought I should post them here. Thanks to Dana for the recipes (were in the cookbook she sent me for my birthday).

The best thing about these mixes is that they are both dry. So it is a good food storage recipe. All you need to do is add hot water, hot enough to basically get it hot enough to eat.

I also have heard that you can mix the two together, and it is wonderful that way as well.

Tbs.= tablespoon
tsp=teaspoon
c= cup
pkg= package


Creamy Cheese Soup

2 1.5 oz pkgs. of Knorr Four Cheese Sauce Mix
3 tsp. chicken bouillon granules
1/2 tsp pepper
2 pkgs. Lipton Recipe Secrets Vegetable Broth
3 Tbs. dried parsley flakes
3 c. powered coffee creamer
5 Tbs. cornstarch

Mix well. This will make 8 servings at a scant 1/2 c.
Add 1 cup water, stir really well, microwave on high 1 1/2 minutes, stir again
cover and let stand for 3 minutes.

Note: I just stirred in hot water and it worked, I didn't let it stand. The original recipe called for 1 package of cheese and the vegetable mixture, but I thought it needed more, so I added 1 more of each package.


Creamy Potatoe Soup

1 1/2 c. instant mashed potatoes
1 1/2 c. dry milk
2 tbsp. instant chicken bouillion
1 tsp. dried parsley
2 tsp. dried minced onion
1/4 tsp. dried thyme
1/4 tsp. ground white pepper (I used black pepper and it worked out fine)
1/8 tsp. tumeric
1 1/2 tsp seasoning salt (like seasonall)

Combine all ingrediants mix well. This makes 6 servings.

Place scant 1/2 c. in bowl, add 1 cup boiling water. Stir til smooth.
